Does the blue edition modify the eclipse core or is it architected as a set of plugins just like the regular MyEclipse? I ask because if I decide to uninstall MyEclipse blue, will it leave the eclipse installation unaffected?

MyEclipse Blue is architected in exactly the same way MyEclipse is. That being said we don't ship a plugin-only install of Blue at this time, right now I believe it's All in One only. But assuming you added Blue manually to some other Eclipse install of yours, yes you can remove it just like with MyEclipse.
