I have just dowloaded MyE blue and was getting ready to start the setup/configuation.

But, I noticed when looking at these instructions http://www.myeclipseide.com/documentation/quickstarts/websphere6/ I do not have nor see the Profile Creation menu option in IBM Websphere Is there another way to go about this? what am i missing?[/url]

I think there's a little bit of confusion here. The profile creation menu is part of WebSphere 6.1, not part of MyEclipse Blue. What the tutorial walks you through is how to create a WebSphere profile for use with MyEclipse. So, as a prerequisite you need a development version of WebSphere 6.1 or 7.0 installed and configured. You can get a free development version of WebSphere from IBM here if you don't already have one available: http://www.ibm.com/developerworks/downloads/ws/wasdevelopers/?S_TACT=105AGX10&S_CMP=LP
