No reference to derby at all untill I tried to stop the server which it would appear never started:
Only after I attempted shutdown did a log entry appear:

Please try a repair or reinstall of the profile and let us know if it fixes the issue with Sandbox Derby.

Never mind. I ended up re-installing it!
